I just love this holiday! What could be more fun that wearing green, drinking beer, and making fun of short people?!
The food's not bad either!
Here are some of my favorite recipes to make on this holiday!

4 cups all-purpose flour
4 tablespoons white sugar

1/2 teaspoon salt

1 egg

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
In a large bowl, mix the flour, sugar, baking soda, baking powder, salt and margarine.

Stir in 1 cup of buttermilk and egg.
Turn dough out onto a lightly floured surface and knead slightly.
Form dough into a round and place on prepared baking sheet.
In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture.
Use a sharp knife to cut an 'X' into the top of the loaf.
Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Continue to brush the loaf with the butter mixture while it bakes.

Corned Beef with a Mustard Glaze
1 corned beef brisket
2 tablespoons pickling spice
1/4 cup brown sugar
2 teaspoons course ground mustard
2 tablespoons pickling spice

Place roast in a deep cooking pan on the stove.
Season with pickling spice and fill with enough water to cover the roast.
Cover and cook on medium heat according to direction on the package
*For even more of that Irish flavor, add a bottle of Guinness
then add enough water to cover the roast.

When roast is nearly done preheat the oven's broiler to 375.
Combine mustard and brown sugar in a small bowl.

Remove brisket from pan and transfer to a casserole dish.
Coat with mustard mixture and broil in the oven for 5-7 minutes.

Irish Mashed Potatoes
8-10 potatoes peeled and quartered
1 clove garlic
1 onion diced
1 cup shredded cabbage
4 slices of bacon
butter
milk

Brown bacon in pan. Crumble into bits and set aside.
Boil potatoes until soft enough to mash.
Reserve about 1 tbsp of the bacon grease in the pan you cooked it in, discard the rest.
add garlic and onion to bacon grease and saute until the onions begin to
turn brown. Add the cabbage and cook until the cabbage is soft.
Remove mixture and set aside.
Mash potatoes with butter and milk to the desired consistency.
Stir the onion and cabbage mixture & the bacon into the potatoes.
Season with salt and pepper to taste, then serve.

All of you people are making me feel guilty about St. Patty's Day! I didn't do anything. My sister made green eggs and milk, you and your recipes, others with their books and movies. AHHHHH! I didn't do anything although when we have kids I am sure I will.
I will have to try a few of your recipes sometime but not tonight. Heath made marinated steaks and baked potatoes. YUM!
